USULAN PENERAPAN GOOD MANUFACTURING PRACTICE (GMP) PADA AIR MINUM DALAM KEMASAN DI CV XYZ

Abstrak

CV XYZ is a home industry with products produced, namely Bottled Drinking Water (AMDK), one of which is the "ANNA" brand which is produced with the main raw material, namely water. This AMDK production has problems in the production room, such as workers who do not follow SOP protocols, such as not wearing complete PPE, the production room does not look clean, the placement of production support tools in any place, inadequate ventilation, the floor is relatively slippery, and labeling problems often occur. Critical deviations affect product contamination directly or are considered the most serious and the methods used are fishbone analysis and gap analysis. After implementation, the appropriate aspects of the change in improvement at CV XYZ obtained results of 65 or 77% and aspects not in accordance with 19 or 23% from the initial assessment of the appropriate aspects of 63% and aspects not in accordance with 31 or 37%.

CV XYZ merupakan home industry dengan produk yang dihasilkan yaitu Air Minum Dalam Kemasan (AMDK) salah satunya dengan merk “ANNA” yang di produksi dengan bahan baku utama yaitu air. Produksi AMDK ini, memiliki permasalahan dalam ruang produksi, seperti pekerja yang tidak mengikuti protokol SOP, seperti tidak memakai APD lengkap, ruang produksi tidak terlihat bersih, penempatan alat penunjang produksi di sembarang tempat, ventilasi tidak memadai, lantai relatif licin, serta pelabelan sering terjadi masalah. Penerapan Good Manufacturing Practice (GMP) di CV XYZ pada ruang produksi, dengan cara mengidentifikasi faktor–faktor penyebab permasalahan terhadap GMP di perusahaan ini hanya pada ketidaksesuaian dengan penilaian kritis. Penyimpangan kritis berpengaruh terhadap kontaminasi produk secara langsung atau dianggap paling serius serta metode yang di gunakan analisis fishbone dan analisis gap Setelah melakukan implementasi, aspek sesuai terjadi perubahan peningkatan pada CV XYZ mendapatkan hasil sebesar 65 atau 77 % dan aspek belum sesuai sebesar 19 atau 23% dari penilaian awal aspek sesuai sebesar 63% dan aspek belum sesuai sebesar 31 atau 37 %.
